The region of Hijaz, Western Saudi Arabia, is not only a geographic name but also denotes a socio-cultural dimension of its society, also reflected in the Urban context. Hijazi is an urban identity representing not merely past and present of Hijaz but also a congregation of cultures. The Hijazi, cuisine isn’t any different than the city; it is a unique assortment of foods from all around the Islamic world. Fül and Tameez is the perfect example of just that; presence of two cultures in creating a unified Hijazi identity.
While Fül is a fava bean stew based Yemeni origin, on the other hand Tameez is an Afghan (Central Asia) bread. Due to the diverse nature of the culture, only in Hijaz would you find these two continually associated with one another. One could never find a Fül shop standing alone, a Tameez seller is always next door. Each stands on its own -proud of its heritage- yet they have become inseparable pair that one could not imagine one without the other. This dish exemplifies the evolution of Hijazi culture.
دور جدة المزدوج كبوابة للحرمين وأيضا عاصمة تجارية جعلها مدينة متعدده الثقافات. الحجازية ليست ظاهرة حضارية تمثل الماضي والحاضر بل أيضا خليط من ثقافات متنوعة. الطبخ الحجازي لا يختلف عن طبيعة المدينة بل هو مثلها بحيث يتكون من مزيج فريد من الأطعمة من جميع أنحاء العالم. الفول والتميس هو نتاج حضور ثقافتين مختلفتين في ظاهرة حجازية موحدة.
الفول وجبة يمنية، في حين التميس خبز أفغاني (وآسيا الوسطى). المثير للإهتمام أنه فقط في الحجاز سوف تجد كلا من الفول و التميس مرتبطين ببعضهم البعض. لا يمكن لأحد أبدا العثور على متجر فول يقف وحده، سوف تجد بائع تميس دائماً يجاوره. الثقافة الحجازية تختم وجودها على أطعمة مختلفة من جميع أنحاء العالم و في نفس الوقت تجعل من هذه الثقافات منتج فريد للهوية الحجازية.
